News of public record: Guernsey County restaurant inspections

The following are restaurant inspections with critical violations, as conducted by the Guernsey County Health Department from June 10 to 14.

June 11

Cambridge Country Club, 60755 Southgate Road, Byesville. Follow up inspection. The person in charge is not ensuring employees are properly sanitizing equipment and utensils and monitoring sanitizer parameters. Employees present at the time of inspection were not able to demonstrate knowledge of required sanitizer concentrations and/or proper procedures for testing sanitizer solutions including those dispensed by ware washing equipment. Cooked potatoes and various plated desserts were uncovered. Raw pork sausage links were stored above baked potatoes. Raw chicken was stored above ground beef patties. The potato slicer is covered in accumulations of food and debris and is generally unclean. French onion and chicken noodle soups are being cooled in large containers. Employees are not monitoring the time or temperature of foods being cooled. Har boiled eggs and cole slaw were date marked May 7 and June 4 respectively. Baked potatoes were not date marked. A chemical spray bottle containing an unknown blue liquid was labeled with the common name of its contents. The container of sanitizing solution labeled as an ammonia-based chemical was refilled with a chlorine-based chemical. Chemical solutions are being stored in containers with inaccurate or incomplete labeling. Hot water is not functional at the three-compartment sink, resulting in wash solution temperatures less than 110 F. The temperature of the wash solution in manual ware washing equipment shall be maintained at not less than 110 F.
