By now, I’m sure we’ve all seen the less-than-ideal food that our fan-favorite Olympians have been chowing down on. And unless these athletes have a shared obsession with the viral chocolate chip muffins like the Norwegian swimmer Henrik Christiansen, I’m sure they’re dreaming of eating their favorite foods. Some may turn to their fast-food staples or post-match comfort foods, but track and field star Noah Lyles likes to indulge in a classic sandwich—with his own little twist.

Noah Lyles' Favorite Grilled Cheese Sandwich

The track star shared his go-to grilled cheese recipe with NBC 6 South Florida, even remarking that it’s so good that he has it ingrained in his memory.

“I just got a really good recipe for grilled cheese,” he explains. He laughs and smiles in the video, saying, “I’m like getting excited about eating it right now.” All you’ll need for this delicious riff is wheat bread, goat cheese, and spicy mayo. While it’s a little messy to make, the payoff is well worth it.

How to Make Noah Lyles' Grilled Cheese Sandwich

As Lyles explains in the video, you’ll first want to spread the spicy mayo on both sides of the bread. Then, carefully slice the goat cheese “to an amount that you actually want to eat,” advises Lyles. Goat cheese is probably too crumbly to slice cleanly, so I recommend breaking off some good-sized blocks from the log. Put the two together and heat up your pan. Cook until the bread is crispy and brown. Flip and repeat. Take off the heat and cut your sandwich (Lyles prefers a long triangle shape). And that’s it! The goat cheese with spicy mayo makes for a creamy and flavorful combo.
