Inspector's notes:

  • Ware washing sink sanitizer is not sufficient. Employee was using laundry chlorine bleach. Disinfecting chlorine bleach was added and sanitizer measured 50 ppm.

  • Saw employee not use a paper towel to turn off faucet handle after washing hands and instructed employee of proper hand-washing technique during inspection.

  • Mop sink is not plumbed to allow for proper disposal of mop water.

  • Observed cockroaches near back door behind kitchen and behind refrigerators that must be removed daily. Gaps in entry doors must be covered to prevent pest entry.

  • Peeling paint on vent hood must be made cleanable. Observed small leak under Galaxy refrigerator.

  • After use, mops must be hung up to dry properly. Damaged and missing ceiling tiles must be replaced. Exposed wood and damaged areas of walls must be made cleanable.

Inspector's notes:

  • Certified food manager certificate hanging on the wall expired July 24, 2023. Certification must be renewed or a current certificate must be hung up.

  • Some food items in the walk-in cooler were not properly labeled with a use-by or discard date. Foods kept longer than 24 hours must be date marked.

  • Saw one live cockroach in the kitchen. Fly strip is located over a food prep area and must be moved so it can’t potentially contaminate food or food-contact surfaces.

  • Wiping cloths not kept in sanitizer. Wiping cloths for cleaning up spills and food debris must be kept in sanitizer solution to avoid potentially growing pathogens.

  • Vented hood nozzles are a little greasy and dusty. The walk-in freezer has significant accumulation of frost.

  • Bulk food bins, such as salt and sugar, are not labeled. They must be labeled with the common name of the food inside.

  • Floors, walls and ceiling have noticeable staining. Some may be permanent staining, but make an effort to regularly clean them to prevent them from getting worse.

  • Lighting in the kitchen is a little dim. Some ceiling lights are burned out or not working.

  • Kitchen generally has some clutter that should be cleaned up.

Four sites were visited by inspectors but were not inspected because they were not open. Those sites were: Hobo Coffee & Ice Co., I.C. Evans Elementary School of Burkburnett, Starbucks Coffee Co. at 2910 Kemp Blvd. and Zundelowitz Elementary School of Wichita Falls.
